Bone Broth and Fall Soups

In traditional cooking, bone broth has been prepared for centuries. Before our modern strategies of harvesting only the meat of the animals for consumption, our ancestors made use of every part of the animals they consumed in order to get the most flavor, prevent food waste, and to extract every last bit of nutrition. Today, modern science tells us why this practice is so beneficial for health and wellness. The nutrients in the bones of the animals we consume work synergistically with the nutrients in the animal meat to promote optimal health. Consuming one without the other can leave you with an incomplete nutritional profile. 

Come to this class to learn how to create a delicious bone broth soup and to learn why utilizing every part of the animals we consume can be so nourishing and can help promote long term health. Participants will view the preparation of a bone broth soup, and will be invited to try samples. Participants will also go home with a simple bone broth recipe and a recipe for the soup that is prepared using the broth. 

Courtney's interest in health and wellness started at a very young age. She remembers as a child she was fascinated to learn that the foods we eat have a direct impact on our health. Courtney has always been a relatively conscious and healthy eater, but had a desire to better understand the interaction between diet and health. After high school, she decided to pursue a degree in nutrition and dietetics and turned her interest in nutrition into a career. During her undergraduate career, Courtney had the opportunity to work at Nutrition World and learn how supplements can be combined with a nutritious diet to optimize health. At UTC, she completed her bachelor’s degree in nutrition with a minor in psychology. She also completed her dietetic internship at UT Martin which included 1200 supervised practice hours in dietetics, then passed her registration exam to become a dietitian. Currently, Courtney is pursuing a master’s degree in nutrition. She loves working at Nutrition World because it gives her the opportunity to share her passion and help individuals better their health every day.
